VINIFICATION AND AGING

Gemini is both a cru and a reserve, born from the bunches of our best vines, planted in 1993. The vines surround our cellar and their production is about 60 ql per hectare. The grapes are harvested manually at the beginning of October, after the destemming the fermentation starts. Our gemini has the privilege of fermenting and maturing in truncated cone vats of about 70 hl dedicated to it. In the same vat we follow the alcoholic fermentation, the malolactic fermentation and finally the aging, as long as needed and generally never less than 36 months.

Organoleptic characteristics

Intense and bright ruby ​​red color, ample and persistent bouquet with elegant hints of fruit, ethereal notes of marasca cherry in alcohol, suggestions of dried tobacco and complex hints of sweet spices. Velvety, opulent and long tannins, well supported by a crunchy acidity that leaves no doubt about the ability of a long aging. Juicy, savory and very mineral finish, characterized by an interminable gustatory energy, which stimulates salivation and recalls important meat-based foods, with which the partnership of this Reserve can achieve perfection. Wine with a strong personality.

Food pairings

A remarkable wine gives its best in combination with red meat and typical Tuscan cuisine, game, aged cheeses, wine also for meditation. Average alcohol content 14.5% vol. Average total acidity: 5.2 gr / l. Average dry extract: 34. Serving temperature 15 ° – 18 ° C.
